Chicken Sauce

Recipe: Chicken Sauce

Ingredients

  • 5-6 Tbsp. butter
  • 5-6 Tbsp. flour
  • 3 c. milk
  • 3 tsp. chicken bouillon
  • 1/4 – 1/2 tsp. paprika
  • 2 c. cooked, shredded chicken

Instructions

  1. In a saucepan over medium-low heat, melt butter. With a whisk, stir in an equal amount of flour and cook for about a minute. Slowly add milk, stirring constantly. Continue cooking and stirring until the sauce has thickened. (You may need to turn the heat up a bit.) When sauce has thickened, stir in bouillon, paprika, and chicken. Continue cooking just for a moment until heated through. Serve over toast.

Number of servings (yield): 6

Chicken Pot Pie

Recipe: Chicken Pot Pie

Ingredients

  • 1 c. chicken, cooked & diced/shredded
  • 1 c. vegetables
  • 1 can cream of chicken soup, or homemade white sauce with chicken bouillon
  • 1/4 c. milk
  • 1 pie crust, unbaked

Instructions

  1. Mix chicken, vegetable, soup, and milk. Pour into greased 8″ square pan. Roll out pie crust and place on top. Bake at 375 for 35-45 minutes, until pie crust is done.

Chicken Casserole

Recipe: Chicken Casserole

Ingredients

  • 2 c. cooked, diced chicken
  • 2 c. (uncooked) whole wheat macaroni
  • 2 c. chicken broth (or 2 c. water + 2 tsp. bouillon)
  • 2 cans cream of chicken soup, or homemade white sauce with chicken bouillon
  • 1 c. cheddar, cubed
  • 1/4 – 1/2 c. milk

Instructions

  1. Mix all ingredients together in a large bowl. Grease a 9×13″ pan and pour mixture into it. Bake at 350 degrees for 45 minutes or until macaroni is done.

Number of servings (yield): 8
